Yamasan Masamune, 90 Junmai, 720ml Kameizumi Junmai Daiginjo but not asType: Junmai Polishing ratio: 90% Rice Variety: Gohyakumangoku Alcohol percentage: 18% A very special sake, given the high ratio of polishing, which means only 10% of the original rice grain was removed. This is not however a compromise on quality as the toji personally oversees the polishing. The result is a grainy, rice infused sake, powerful in style but undoubtedly complex!
